Sous vide bag inflate, baloon, during cooking process

During sous vide cooking, some cooking bags may inflate, sometimes quite dramatically, when exposed to high temperatures such as 100 °C. This phenomenon is caused by steam and gases present in the food that are released and expand under the effect of heat.

It is important to understand that this inflation is not related to the quality of the bag used, but to the physical and chemical properties of the food itself.
